Ingredients:
Paneer (cottage cheese): 250 grams, cubed
Ramdev Kasoori Methi: 2 tablespoons
Fresh Cream: 1/2 cup
Onion: 1 large, finely chopped
Tomato: 2 medium, pureed
Green Chili: 1, finely chopped (optional)
Ginger-Garlic Paste: 1 tablespoon
Turmeric Powder: 1/2 teaspoon
Coriander Powder: 1 teaspoon
Cumin Seeds: 1 teaspoon
Garam Masala: 1/2 teaspoon
Red Chilli Powder: 1/2 teaspoon
Salt: to taste
Sugar: 1/2 teaspoon
Oil or Ghee: 2 tablespoons
Water: 1/2 cup
Cilantro: for garnish
Instructions:
Prepare Kasoori Methi:
Soak 2 tablespoons of Ramdev kasoori methi in warm water for 10 minutes to soften. Drain and keep aside.
Paneer Preparation:
Fry the paneer cubes lightly in a bit of oil. Then keep it aside.
Cooking the Base:
Heat 2 tablespoons of oil or ghee in a pan over medium heat.
Let one teaspoon of cumin seeds splutter.
Sauté finely chopped onions lightly.
Add 1 tablespoon of ginger-garlic paste and cook until the raw aroma fades.
Incorporate Spices and Tomatoes:
Stir in 1/2 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of red chili powder.
Cook tomato puree in it till the oil separates.
Combining Ingredients:
Mix in the soaked kasoori methi.
Gently stir in the paneer cubes.
Making the Gravy:
Add 1/2 cup of water and bring to a simmer.
Season with 1/2 teaspoon of garam masala, 1/2 teaspoon of sugar, and salt to taste.
Take 1/2 cup of fresh cream and mix it properly. Let the gravy simmer until it reaches your preferred consistency.
Garnishing and Serving:
Garnish with fresh coriander.
Serve hot with naan, roti, or rice.
