Ingredients:
500g fresh okra (bhindi), washed and dried
2 tablespoons oil
1 onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit lengthwise
1 teaspoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon turmeric powder
1 tablespoon coriander powder
1 teaspoon garam masala
1 teaspoon amchur (dry mango powder)
Salt to taste
Fresh coriander leaves for garnish
Ramdev Red Chili Powder (to taste)
Cooking Instructions:
Heat oil in a pan over medium heat. Heat some cumin seeds in the pan until they start crackling.
Stir in diced onions and cook them until they get golden colour.
Stir in ginger-garlic paste and slit green chilies. Sauté for a brief period until the pungent smell is gone.
Add tomato pieces and cook them till they become tender.
Now, add turmeric powder, coriander powder, garam masala, amchur, Ramdev red chilli powder, and salt. Stir thoroughly and let the mixture simmer for a few minutes
Add dried okra into the pan. Stir gently to coat the okra with the spice mixture.
Cover the pan and cook on low heat for about 10-12 minutes, stirring occasionally, until the okra is tender.
Garnish with freshly chopped coriander leaves.
Serve hot with roti and enjoy!
