Ingredients:
For the Bhaji:
Potatoes: 3 medium, peeled and chopped
Cauliflower: 1 cup, cut into small florets
Green Peas: 1/2 cup
Carrots: 2 medium, chopped
Green Bell Pepper: 1, finely chopped
Tomatoes: 4 large, finely chopped
Onions: 2 large, finely chopped
Ginger-Garlic Paste: 1 tablespoon
Ramdev Pav Bhaji Masala: 2 tablespoons
Turmeric Powder: 1/2 teaspoon
Kashmiri Red Chili Powder: 1 teaspoon (for colour)
Salt: to taste
Butter: 4 tablespoons
Oil: 2 tablespoons
Water: as needed
For the Pav:
Pav Buns: 8
Butter: for toasting
For Garnish:
Fresh Coriander Leaves: finely chopped
Lemon Wedges: for serving
Onions: finely chopped
Butter: a few cubes for serving
Instructions:
Boil the Vegetables:
Boil the potatoes, cauliflower, green peas, and carrots until they are soft. Drain and set aside. Alternatively, pressure cook these vegetables for 2-3 whistles.
Prepare the Bhaji:
In a large pan over medium heat, warm 2 tablespoons of oil and 2 tablespoons of butter together. Once the oil and butter mixture is hot, add 1 teaspoon of cumin seeds and allow them to sizzle and release their aroma.
Sauté the finely chopped onions until golden brown.
Add 1 tablespoon of ginger-garlic paste and sauté until the raw smell disappears.
Add Tomatoes and Spices:
Add the finely chopped tomatoes to the pan and cook them until they become soft and mushy.
Mix in 2 tablespoons of Ramdev Pav Bhaji Masala, 1/2 teaspoon of turmeric powder, and 1 teaspoon of Kashmiri red chili powder for colour. Stir well.
Mash the Vegetables:
Add the boiled vegetables to the pan. Mash them using a potato masher until well blended and slightly chunky.
Add water as needed to adjust the consistency. Heat the mixture over medium heat and simmer for about 10 to 15 minutes, stirring occasionally.
Finish the Bhaji:
Add 2 tablespoons of butter and mix well.
Garnish with freshly chopped coriander leaves.
Prepare the Pav:
Slice the pav buns horizontally and spread a light layer of butter on each side.
Heat a griddle over medium heat and toast the pav buns until golden brown and crisp on both sides.
Serve:
Serve the hot bhaji garnished with a Cheese.
Serve the toasted pav buns on the side, accompanied by finely chopped onions and lemon wedges.
